Is 201 stainless steel approved by the NSF just like 304 stainless steel?
Basically 201 has less nickel and a lot more manganese, to reduce the raw material cost.
Of course the sales poeple say it is "better" as well as cheaper - well, that's what they are paid to do, isn't it? It's not necessarily better or worse - just different.
