If you deep fry at home and you want to keep the oil how long can you reuse it for and where should you store it. Whats the best way to deep fry ie wok, buy a electric deep fryer or use a large saucepan?
You can keep oil so long as you can see through it. Once it starts getting dark, throw it out. When the oil is cold, you can filter it through a strainer lined with a coffee filter. Keep your oil in any type of container and you can leave it out on your kitchen counter or in your cupboard.
An electric deep fryer is probably the easiest to use, since it has a build in thermostat and temperature setting.
A wok or a saucepan will work fine, just realize that there is a fire danger because you won't know how hot the oil is, exactly. If it starts smoking, its too hot. Most digital thermometers will have a read-out high enough for you to check the temp of the oil. It should be 325 - 400 F. Its best to use oils with high smoke points. There is less of a danger of causing a fire and the oil will last longer before it breaks down. Peanut oil is an excellent choice for deep frying.
Place a spoon into your oil. If you can still the spoon in the bottom of the container, you can still use your oil. If its starting to get dark enough so that its difficult to see the spoon, then your oil is too old.
