How do you tell the difference between bread flour and all purpose flour?
I have both in air tight containers, I normally keep them in separate places, but my sister was here and she put them back in the same place. How can I tell which is bread flour and which is all purpose?
You can't really. They're very nearly identical. The only difference is the amount of protein in the flour.
Bread flour is made from Winter Wheat which contains a greater amount of protein and less carbohydrates. Bread flour needs more protein in order to create the gluten that makes bread dough sticky and gooey and helps retain the gas bubbles produced by the yeast and makes for a lighter, chewey, fluffier bread.
Personally, I use AP (All Purpose) flour for everything (including breads) except cakes. Cakes require a lower protein cake-flour, which helps to create the light and not-chewey texture we want from a cake. Protein, and therefore gluten, is bad for cakes because you don't want to be "chewing" a cake...just simply biting into it should be enough.
